Can I just say, IT'S FREAKING AUTUMN AND I'M FREAKING EXCITED ABOUT IT.
Autumn just screams EVERYTHING pumpkin, so when's a better time to be making pumpkin goodness!
For some of you, it might sound weird to put pumpkin into treats, but trust me, it's oh so damn good and it doesn't taste like your eating raw pumpkin or anything at all. However, last year I made a pumpkin pie and I actually wasn't so keen on that. But this is just a whole different story, this tastes like heaven (am I exaggerating, I don't know).
I got my handy (!) bake hands out and created this ultra-moist, autumnal pumpkin bread.
So easy to make and bake and the house instantly smells like pumpkin spice and everything nice!!!
Crawling up on the sofa with a cuppa tea/cuppa coffee, a good book/movie and you're basically settled for the day, woohoo! Believe you me, you're gonna wanna make this.
P.s : I feel like I typed pumpkin way too much, PUMPKIN PUMPKIN PUMPKIN.
Pumpkin Bread (based on this recipe)
for 2 loafs
You will need :
400g Caster Sugar
235 ml Canola Oil
4 Eggs
450 grams Pumpkin Puree (you could buy this, but I like to make it myself with Pumpkin Cubes)
175 ml Water (+ for your pumpkin puree)
375g All Purpose Flour
2 Teaspoons Baking Soda
1/2 Teaspoon Table Salt
2 Teaspoons Cinnamon
1/2 Teaspoon Cloves
1/2 Teaspoon Nutmeg
1/2 Teaspoon Ginger
1/2 Teaspoon Allspice
Method :
☂ Preheat your oven to 180 degrees and grease your 2 loaf tins with some oil.
☂ Put your Pumpkin Cubes in a Saucepan on a low to medium heat. Pour in Water until your Pumpkin Cubes are covered. Let the water simmer for around 10 minutes until the Pumpkin turns soft.
☂ Once your pumpkin is cooled down, put the Cubes into a blender (I use my Nutribullet) until it forms a liquid, which is your Pumpkin Puree
☂ Beat together your Sugar and Oil until blended. Add in your Eggs, one at a time mixing after each addition.
☂ Add in the Pumpkin Puree and 175 ml Water unil well combined.
☂ Whisk together your Flour, Baking Soda, Salt and all your Spices (Cinnamon, Cloves, Nutmeg and Allspice) until everything is combined. Pour your batter into your loaf tins.
☂ Bake the Pumpkin Breads for around 45 minutes but make sure you check them in time. They're ready when you're skewer comes out clean and when the center springs back when you touch it.
Let them cool down and enjoy ya pumpkin breaaaaaaad. ♡
