EASY EASTER TREATS

How are you feeling about the fact it's spring and easter and you get to eat all the chocolatey goodness?

Well, I'll tell you, I FEEL GOOD!!!

This easter I planned to make cheesecake nests and easter rocky road (the sound of that already makes me want to have a couple of these)

And let me say, I do like to go out on seasonal things, so this year was no different.

They are so easy to make and normally nothing can go wrong if you're not a master in baking.

I'm really happy with how they turned out and they look so cute on your easter table.

I loved to make these and my family is munchin away on them as well (which means they are really good).

Easter cheesecake nests (based on this recipe)

You will need :

85g Digestive biscuits

150g + 2 Tablespoons Caster Sugar

3 Tablespoons Melted Butter

675g Cream Cheese

1 Teaspoon Vanilla extract

3 Eggs

Coconut flakes

54 Mini Eggs

Method :

✿ Preheat the oven to 170°C

✿ Crush your digestives into crumbs . Mix the Digestive crumbs with 2 Tablespoons of Sugar and 3 Tablespoons of Melted Butter.

Press them onto the bottoms of your 18 paper-lined cupcake cases.

✿ Beat Cream cheese, Vanilla extract and 150g Sugar with mixer until everything is blended.

Add in your eggs, 1 at a time, mixing on a low speed until well combined.

✿ Spoon the liquid over onto your cupcake cases.

✿ Pop them into the oven and bake the cheesecakes at 170°C for around 25 minutes.

Let them cool down and refrigerate for 2 hours until set.

✿ Top each cheesecake with 1 Teaspoon Coconut flakes and decorate each one with 3 Mini Eggs (to resemble them as bird nests)

I've put 4 of mine into cupcake cases with chicken legs as it gives it that extra easter touch, HOW CUTE DOES THAT LOOK?

Easter rocky road (based on this recipe)

You will need :

400g Milk Chocolate (or Dark chocolate, if you prefer)

125g Treacle

125g Unsalted Butter

100g Mini Marshmallows

150g Choppped Digestives

300g Mini Eggs

100g M&M's (mine are Easter edition)

150g Chocolate eggs (Whatever flavour you prefer, I used milk, white and filled)

250g White Chocolate

Method :

✿ Line a 8/9 Square tin with Parchment paper and leave to the side.

✿ In a Large bowl, add in the Chocolate, Treacle and Butter. Make sure you melt on a low heat over a double boiler, to avoid burning the chocolate.

Stirr until everything is smooth.

✿ Once it's melted, add in the Marshmallows, chopped Digestives, Mini Eggs, M&M's and Chocolate Eggs.

Fold it softly together until everything is coated in chocolate. pour into your square tin and spread evenly.

✿ Melt the White chocolate and drizzle it over the top of your Rocky Road.

✿ Pop it into the fridge until set, chop them up and ENJOY.
